The most simple chicken stir fry recipe

The other day I posted this picture on Instagram ( handle @shampita_trl). If you are not following me there already, do stop by and follow as all the actions happens there first. So, many of my friends have been pinging me on watsapp to share the recipe, I did share with couple of you guys. But then I thought why not post it publicly. This is a favorite of everyone at my home, and it just takes minutes to stir fry minus the chopping and frying of the chicken. All of the ingredients usually are always at our disposal.

Serves : 5 people, Preparation time : 30 mins
Ingredients :

For the marinate :
500 gms boneless chicken, sliced into strips ( ask your butcher, he will do it for you )
1 small onion
5-6 cloves of garlic
1 inch of ginger
2 green chilli
2 tablespoon of vinegar
Cornflour to bind, keep 100 gms handy
Salt and pepper to taste

For the stir fry:
2 large onion juliened
1 large bell pepper, julienned
1 medium sized carrot, julienned
8 cloves of garlic finely chopped
1 inch of ginger finely chopped
5-6 green chilis sliced diagonally ( chili is again as per to your liking, I like my food very spicy )
Couple of sprigs of spring onion finely chopped, keeping the white onion part and the green leafy part separated
50 gm of Tomato ketchup
1 table spoon of soya sauce
2 tea spoon of chili sauce ( again as per your liking )
Salt and pepper to taste
Oil to fry

I blitz onion, ginger, garlic, green chili in the mixer to avoid unnecessary time taken to finely chop them. Pour the mix in the chicken ( make sure the chicken is washed, cleaned and excess water is removed ). Add in all the ingredients except the cornflour and keep them side. Allow the chicken to marinate for minimum of 30 mins. While the chicken in marinating I run errands around the house. Chop up the vegetables for the stir fry. Time management you see !

Heat up some oil to deep dry the chicken in a wok. While the oil is heating up, mix in the cornflour in the marinated chicken. You would see that chicken would have given away some water, keep on adding cornflour until everything is bind. They fry the chicken strips in hot oil until golden brown.

To avoid lot of washing up, I stir fry in the same wok, keeping around 1-2 tablespoon of oil and decanting the rest in a container for future use. Now slowly add in the aromatics, first ginger, garlic, chilies, the white part of the spring onion, then the sliced onions. Once they are slightly translucent add in the carrots and capsicum, followed with a couple of pinch of salt and pepper. Do not over fry them, stir the veggies for around 2 minutes top. Then add in the fried chicken, along with tomato, chili and soya sauce mixed in a bowl with a little bit to water to dilute it. Stir well for sometimes, until everything is nicely coated with the sauces. Sprinkle over chopped green part of the spring onion and it's done.

We have customized the way we eat food, for us Chinese pairs perfectly fine with Indian fulkas or parathas. That's how we eat this for dinner, Sounds strange right, But you can definitely make some fried rice or noodles as you fancy. In the stir fry you can add mushrooms too, if it is available with you.
