Weekend Breakfast : My easy healthy pancakes with home made pancake syrup

Come weekend and it's time to indulge. no matter if you are on diet or not ( like me ). I usually whip up something special and most of the time I rush and do not get ample time to take pictures and share the recipe. But today's is an exception, as it's again a long weekend, and most of my Saturday chores I have finished yesterday. So now I can sit back relax, enjoy my pancakes while typing this post.










My pancakes are simple to make as all the ingredients are always handy with me and it just takes me minutes to make the batter and fry the little heavenly discs. This is something that my brother adores as breakfast and my husband equally loves them too. Though somehow the Mr. loves devouring them with jam. These are healthy too as I halve the quantity of flour and replace with oats, they do turn out quite well with oats. Now not always all of us have maple syrup handy, I certainly do not. So I make my version of pancake syrup with mixing up some sugar. For the batter, I have already made a mix before hand and stored it, so when I want to prepare some, I scoop up some of the mix and combine them with the wet ingredients of milk, eggs, molten butter and vanilla and voila its ready. The only hard work involved here is mixing which takes about 1 minute I would say and frying which also only takes minutes. So hard isn't it.


  

Preparation Time : 15-20 mins
Makes : 12 small pancakes approx

Pancake Ingredients :

Dry Mix : 
  • 2 cup of all purpose flour
  • 2 cup of oats powder ( regular Quaker oats pulsated into fine powder in a mixer)
  • 1 cup of powdered sugar
  • 8 teaspoon baking powder
Note : Mix all the dry ingredients and store it in an air tight container. The mix stays good for about 2 months. I have never kept the mix beyond this time as within 2 months it usually finishes. If you do not wish to make your pre-mix then for this recipe you would need :
  • 1/2 cup flour
  • 1/2 cup oats powder
  • 1/4 cup powdered sugar
  • 2 teaspoon of baking powder
  • A pinch of salt


Wet Ingredients :
  • 1 egg
  • 2 tablespoon regular melted butter
  • Vanilla essence
  • 3/4 cup of regular cold milk


Procedure:

In a bowl combine egg, milk, and vanilla essence. Once combined add in the dry ingredients and mix well. No need to beat a lot, a little lump is fine in pancakes. Then mix in the molten butter and that's all the hard work.

In a non stick frying pan, ladle in batter and cook the pancakes on each side on medium flame. When your pancakes starts to show bubbles from sides, they are done and it's time to flip them. Once it is golden brown on each sides, take them out and serve with syrup or honey or knob of butter or jam according to your choice . No additional butter is required for frying.

Home made Pancake Syrup recipe:

This is an easy syrup recipe for us who do not have access to maple syrup all the time. All you need is :
  • 1/4 cup of regular sugar
  • 1/4 cup of brown sugar
  • 3/4 cup of water
  • Vanilla essence
  • A pinch of salt
Procedure :

Mix all the ingredients together in a sauce pan and boil it until the sugar is dissolved. Do not over boil. Once dissolved immediately take it off the heat and transfer in a clean bowl. Because of the brown sugar, the syrup takes a beautiful dark brown color. The syrup can be stored in fridge for several weeks.
