cHocOLatE & pEanUt butter squares

When I am at home and watching TV, I am mostly hooked to TLC. I just love love travel and food. And food is not my middle name. It is my name. Seriously!
If Nigella and Lorraine Pascale is coming up on TV, I am just HOOKED. The other day in one of the episode of Loraine Pascale, she was showing her recipe of chocolate and peanut butter squares and she made it look so easy peezy breezy that I just had to try. OK, wallet out, grocery bag in my hand lets head to the super market.
I did tweak the recipe a little to make it little less heavy on toosh ( if you know what I mean ), I had cut down on quantity of sugar and butter, but let me assure you it tastes equally good.

~You would be needing~

1 big pack of digestive biscuits (250 gms)
250 gms of dark chocolate ( I used Morde)
75 gms plain unsalted butter
100 gms of light brown sugar
250 gms of crunchy peanut butter
1 tsp vanilla essence.
Square baking tin lined with parchment paper, or a square silicone cake mold.

Lest gets cooking:

  • Melt the chocolate in microwave or in a double boiler and keep it aside.
  • Blitz the digestive biscuits in a food processor with the light brown sugar.
  • Melt butter in a non stick pan on a low to medium heat. Once the butter is melted add in blitzed digestive biscuits along with the peanut butter and the vanilla essence. Mix well until all combined.
  • Pour the mixture in the square baking tin lines with parchment paper and level the mixture well.
  • Pour in the melted chocolate and then refrigerate for 1 hour until set. Once set cut into squares and serve with tea or coffee or just as it is. They are super yumm. Nomnomnomnom ....

Note : Keep a tab on it, don't over freeze it, or else it will be difficult to cut the squares neatly and chocolate on top might break unevenly resulting in a crumbly yummy mess. Well you can use this mess on top of some vanilla ice cream and enjoy.
I kept it in the freezer to set quickly and then forgot all about it. Why you ask? Well The Vampire Diaries was on ! Hence I had super struggle to cut them neatly.
What you can do is, wait for it semi set, carefully cut squares in the pan and then put them back in the refrigerator.
